The Producer and the Chef – Mountain Miso and The Market Cat Listing
Dom Aboud, head Chef at the Union Bank Orange will team up with local food artisans Nana Harada (Mountain Miso) and Robbie Robinson (The Market Cat) to produce a memorable lunch. Dom has supported many local food producers since he took over the hot plates at the UB in Spring 2019. Dom spent many years at the highly acclaimed "Rockpool Restaurant" located in the Sydney CBD, working under local legend Neil Perry.
Nana Harada has been making traditional miso (using her grandmother's recipe) since her arrival in Orange from the UK in 2016. Nana's miso matures for 12 months in French oak barrels supplied by local winemaker Philip Shaw. Nana also makes shio koji, soy sauce, tamari and hoshigaki to local restaurants in the Central West.
Robbie Robinson has a long history of supplying premium fresh produce to leading restaurants throughout the east coast of Australia, his specialty is wild mushrooms, mainly saffron milk caps, slippery jacks and lilac wood blewits which he forages on the slopes of Mount Canobolas at over 1000 metres.
