The Producer and the Chef – Journey through the Chestnut Orchard

David Ogilvy from Brittle Jacks Chestnut Orchard is teaming up with TAFE NSW Commercial Cookery teacher Michael Apps.  We will present a 4-course lunch displaying a variety of chestnuts prepared using different techniques. The dishes will showcase the versatility of this product which is only available for a short period each year in Autumn.

Brittle Jacks Chestnut Orchard began in 1976 and has been a long-term project for David. He produces a large variety of Chestnuts ranging from Italian varieties to French. The orchard is located in Mullion Creek approximately 20 minutes from Orange.

The common perception of Chestnuts is to roast over an open fire, peel and eat. Michael has been using David’s Chestnuts since moving to Orange in 2014, he has developed recipes and the knowledge to use the Chestnut in many different food applications from sweet to savoury.

This lunch will showcase the high quality of the Chestnuts and demonstrate the many ways in which they can be used in culinary applications.

The lunch includes a glass of sparkling on arrival and local wine and beer is then available to purchase. No BYO.
